Flourless Chocolate Zucchini Muffins

  • 1/2 cup almond butter
  • 1 overripe banana, mashed
  • 1 large egg
  • 1/4 cup raw honey13324455_10208574437012400_1527590858_o
  • 1/4 cup unsweetened cocoa
  • 2 tbsp ground flax
  • 1 tsp vanilla
  • 1/2 tsp baking soda
  • 1 cup zucchini, grated (squeeze out excess water)
  • 1/4 cup dark chocolate chips, plus some for sprinkling on top


1. Preheat oven to 375 degree. Line muffin pan with muffin liners for 8 muffins. Spray with cooking spray.

2. Mix all ingredients with mixer except zucchini and chocolate chips until batter is smooth and creamy

3. Stir in chips and zucchini by hand

4. Scoop equal amount into every liner (I poured directly into greased tin)

5. Bake 20 min or until toothpick comes out clean13324327_10208574436852396_2102245986_o
